During the practical sessions, we learnt about the different mechanisms of each ingredients such as studying the effects of various sweeteners ion the textural and taste profiles of cookies, the effect of various acids on the hygroscopicity of candy, pasting performance of various starches using Rapid Visco Analyzer (RVA) and lastly the effect of selected ingredients on the texture and flavour of ice cream.
